Instructions

Warmth the oil in a big skillet with a tight-fitting lid over average-high heat. place the onion and bell pepper and prepare till softened, approximately 4 mins.

Add the garlic, chili powder, cumin, oregano, and salt. prepare 30 seconds till very fragrant, then stir within the quinoa, coating this within the spices and oil.

Add the black beans, fire roasted diced tomato es, diced tomato es and green chiles, corn, and water. Bring the mix to a boil, then overlay the skillet with a lid and decrease warmth to low. allow simmer till quinoa is tender and liquid is mostly absorbed, approximately 20 mins. Check on this as either twice as this cooks and give this a stir, adding additional water as needed supposing the mix looks dry.

Add the cilantro, then zest the lime directly over the top of the skillet. Squeeze within the lime juice. Stir to mix. submit hot with any and all desired toppings.
